Easy to make Pumpkin Mug Cake With Chocolate

Well, it’s full-on pumpkin season now, so I don’t feel as bad about throwing pumpkin recipes in your face (I didn’t really feel that bad about it before). Thanksgiving is just around the corner (at least in Canada), and what better way to finish off your dinner than with a pumpkin dessert?

Everything started after I made Fresh Pumpkin Puree. It is so good, and I love its flavour and vibrant colour so much that I can put it in anything you can imagine. This Healthy and easy-to-make Pumpkin Mug Cake with Chocolate is the perfect fall dessert when you just need a little something after dinner!

INGREDIENTS
For the Pumpkin Mug Cake
·     2 tbsp white whole wheat flour
·     1/8 tsp baking powder
·     1/4 tsp ground cinnamon
·     1 large egg white
·     1 tbsp maple syrup
·     1 tbsp pumpkin puree
·     1 tsp mini chocolate chips (can add more for toppings, if you wish to)
·     pinch of salt
For the Chocolate Pumpkin Frosting
·     1 tbsp pumpkin puree
·     1 tsp cocoa powder
·     1/2 tsp maple

INSTRUCTIONS
1.     First, spray a medium-sized coffee mug with coconut oil cooking spray.
2.     Then, add 1 egg white, maple syrup, and pumpkin puree into the mug. Mix until combined.
3.     Add the rest of the ingredients and mix well.
4.     Microwave on high for 60 seconds. Remove and let cool
5.     Prepare Chocolate Pumpkin Frosting by mixing all the ingredients together.
6.     Top pumpkin mug cake with frosting and enjoy!
